Amura by Ángel León has opened at Mount Nelson, A Belmond Hotel, Cape Town, marking Michelin-starred Chef Ángel León’s first restaurant outside Spain.
León joins the project as Culinary Director, bringing his marine-focused culinary approach to Cape Town.
Open year-round, the restaurant is led day-to-day by Head Chef Guillermo Salazar whose experience includes Eleven Madison Park, Arzak, Akelare and Gramercy Tavern and senior roles within the Aponiente group. The menu draws on León’s work at Aponiente while engaging with South African ingredients and coastal ecosystems.
Menu highlights include plankton risotto, yellowtail tartare with escabeche dressing, catch of the day with pickled Cape kelp, pickled West Coast mussels with seaweed-dusted chips and Saldanha Bay oysters paired with Silverthorn “River Dragon” bubbly. The drinks menu includes a kelp martini, Atlantic-aged Bamboesbay sauvignon blanc from Fryer’s Cove and AA Badenhorst Palomino.
Amura’s interior was designed by South African architect Tristan du Plessis with references to the sea and historic ocean liners. The space features an open kitchen and a double-height wine library.
The restaurant is managed by General Manager Markus Fiedler whose background includes The Test Kitchen, Salsify, Noma and Geranium.
